The world of mixology is constantly exploring new frontiers, including the use of still wines instead of traditional spirits to create original “wine cocktails”.
Italian wine cocktails often have protagonists like Vermentino, Traminer, Falanghina, Chardonnay and Greco. These are aromatic wines with complex bouquets and a good structure.
Thanks to the lower alcohol content of white wine (on average, 11 or 12 degrees), wine cocktails are lighter and better tolerated than classic drinks with spirits of 40 degrees and above.
The new wine cocktail at Venus Bar Portovenere
For summer 2024, the mixologists at Venus Bar in Portovenere have created Cà du Kir, a new wine cocktail that enhances local wine.
It is a twist on the classic Kir, the famous cocktail born in 1950 in Burgundy.
The recipe mixes the local “Luccicante” Vermentino wine with Creme de Cassis.
The “Luccicante” is a juicy and tasty Vermentino produced by the Ca du Ferrà farm in Bonassola. This winery is also involved in recovering ancient and rare vines such as Ruzzese, Rossese Bianco, Picabon and Albarola Kihlgren.
Cà du Ferrà is nestled between the Gulf of Tigullio and the Gulf of Poets, a short distance from the Cinque Terre and Portovenere. Its vines are on steep slopes overlooking the sea, and its wines tell the story of traditional heroic viticulture, the sea breeze and the Mediterranean scrub.
Cà du Kir is bright red and offers a pleasant and refined drink. Fun but understated, it’s served in a wine glass.
